The estate and the wine Alfonso "junior", master in the art of winemaking, succeeded his father and inherited his philosophy and charisma. Uncompromising on quality, this extremely talented man knows only how to make fine wines. A resplendent model in the past, the Alphonse Mellot estate now enjoys a permanent place at the summit of world viticulture. Vincent Geantet, master winemaker in the Côte de Nuits, decided to sign up for the "Les Penitents" adventure. On this estate, these two tenors produce wines that are both charming and authentic.
Wine The Cuvée des Penitents Blanc 2008 is obviously the result of beautiful work. The Chardonnay expresses itself in a deep, sharp, Chablis style. The milky and creamy-caramel notes come from perfectly controlled aging. It is the wine's precision and acidic support that have given it a beautiful, pure, radiant tautness. This great Chardonnay possesses great freshness and promises pleasurable drinking.
Vinification Since 2005, the vineyards have been undergoing conversion to organic and biodynamic growing respecting the terroir and the vine as much as possible.
Sequential pneumatic pressing, static settling of the must at a temperature below 10 ° C for about 48 hours. The fermentation and aging in barrels last from 8 to 10 months. Bottled at the property.
