As passionate ambassadors of the Larzac region, Clos de la Barthassade is nestled in the prime areas of the appellation, between Montpeyroux and Jonquières. Guillaume and Hélène Baron make a dynamic pair, drawing on Burgundian expertise and whole cluster fermentation; they even produced wine at the renowned Domaine de la Pousse d’Or in Volnay.

Coming from specific parcels, the 2021 red Terrasses du Larzac Les Ouvrées prominently features Syrah, which contributes half of the blend alongside Mourvèdre and Grenache. This single-vineyard wine, aged in wood and concrete egg, presents a refined ensemble, with juicy, ripe, persistent fruit, centered on spicy notes and depth of style. It's a wine meant for aging, outstanding in its delicate concentration and freshness. It pairs beautifully with red meats or game. |

Hand-harvested. Vinification with 40% whole grapes, gravity-fed vatting and de-vatting, gentle extraction with pumping over for 2/3 of the fermentation, followed by some punching down of the cap, temperature control, 3-week vatting period. Aged 22 months in foudres and demi-muids.
