Hand harvested. 100% de-stemming. Alcoholic fermentation for 15 to 19 days in stainless steel vats, with 2 daily punchings of the cap. Malolactic fermentation and ageing for 12 months in French oak barrels, 10% of which are new. Vineyards of 3 ha, 98 a, 80 ca and 9.85 acres, planted in 1975 and 1979. |
