Hand harvested. Pneumatic pressing and settling. Alcoholic fermentation for 4 weeks, followed by 16 months' ageing with stirring of the lees: 80% in vats and 20% in French oak barrels, 10% of which are new. Vineyards of 4 ha, 89 a, 64 ca and 9.88 acres, planted 1991 and 1995. |
