Hand harvested. 100% de-stemming. Alcoholic fermentation for 19 days in stainless steel vats, with 1 daily punching of the cap. Malolactic fermentation and ageing for 14 months in French oak barrels, 20-3% of which are new, then aged for 2 months in vats.
Vineyards of 4 ha, 84 a and 9.88 acres, spread from north to south of Nuits-Saint-Georges, including ‘Aux Lavières’ for 1 ha, ‘Tribourg’ for 0.90 ha, ‘Les Damodes’ for 0.70 ha..., planted in 1928, 1955, 1965, 1968, 1972, 1979, 1982, 1985, 1986, 1999 and 2012. |
