Jean-Marc Grussaute, a perfectionist in every sense, has elevated this domaine to new heights, crafting wines of remarkable purity and brilliance on Jurançon’s breathtaking slopes.

With over 35 years of experience, Grussaute follows his instincts, farming organically and refining ripeness, blends, and aging techniques to perfection. He has shaped an exceptional legacy by acquiring the finest terroirs and cultivating them with unwavering passion.

Today, his wines rank among the elite, led by outstanding Petit Manseng and a profound understanding of the land. These are wines of true emotion, offering stunning purity and a crystalline freshness that captivates enthusiasts.
Wine A pure Petit Manseng wone, made from raisined grapes rather than botrytized ones, the 2022 white Jurançon Au Capcéu opens with notes of grapefruit, candied orange zest, mint, and quince, and a beautiful freshness. The palate is extravagantly complex, marked by the bitterness of gentian, the presence of spices, cocoa beans, tea tannins, and a salivating, minty finish. An astonishing symphony of flavors!
Vinification Hand harvested from early to mid-November 2022 by successive sorting of raisined, botrytis-free grapes. Vinification without de-stemming, long pressing, indigenous yeast fermentation in 225-liter barrels (5% new) and 1200-liter temperature-controlled tuns. Aged 10 months on lees, 50% in 225-liter barrels and 50% in 1200-liter foudres. Production of 8,000 bottles. Residual sugar: 110 g/l (sweet).
