Wine The 2017 Red Côtes-du-Rhône Assemblage Premium combines finesse and concentration in perfect balance. It is the Côtes-du-Rhône we love, carried by juicy, honest and spicy flavors of fruit, a fine texture, with just the right amount of tension and character. In short, an extremely well-calibrated wine, reflecting the excellence of the Rhône Valley. Enjoy it, it truly is unique!
Vinification Hand harvested, traditional vinification, temperature control of fermentations, long macerations, ageing of 36 months partly in oak barrels.

The estate and the wine Renowned winemaker, at the head of one of the most esteemed estates of the Rhone Valley region, Michel Chapoutier presides over a phenomenal collection of Crus. His talent as a winemaker and his unique knowledge of the vineyard enables him to find the best terroirs for his wines. Of amazing consistency throughout each vintage, his wines are beautiful representations of their appellations. A true reference of the winemaking world! 

It was therefore only natural for us to follow this path to excellence, going back to the Maison Chapoutier with Olivier Poussier to select and blend the most beautiful wines from this sensational terroir.
Wine A model of its appellation and exemplary success in this magical vintage, the 2020 red Saint-Joseph Les Pilandiers benefits from all the virtuosity of Chapoutier's style. This Syrah on granite produces a dense, deep juice with notes of graphite, black fruits, and spices. Firm and powerful, carried by delicate tannins and a spicy finish, this beautiful Saint Joseph delivers the best of its terroir—a must-have, tailor-made for our members.
Vinification Manual harvest, totally destemmed, 15 months maturation in concrete tanks and demi-muids of 2 to 3 wines.

Nose Fresh and very pure at the same time, with delicate, light and floral notes, subtly mineral.
Palate Fresh and tasty with ripe aromas of fruit, this classic wine releases a simple yet structured palate.

Temperature Serve between 10 and 12°C.
Food Aperitif, seafood, shellfish, sushi, egg rolls, ceviche, fish tartar, zucchini fritters, vegetable tian, vegetable pie, wok noodles, vegetable tempura, grilled fish, white meat, cow cheese.
Cellar ageing From now until 2025.

Wine Of an exquisite simplicity, the 2021 white Couvent des Jacobins Burgundy wine offers a complete representation of Burgundy as it is made from a blend of wines selected from all over the Côte d'Or. This mosaic of terroirs forms a tasty Chardonnay, carried by beautiful flavors of fruit and great freshness, but also a good structure granted by the aging in barrels. A classic!
Vinification Hand harvested, fermented in barrels, 1/3 of which are new, aged on fine lees for 8 to 10 months, partly in barrels (from the estate's cooperage) and the rest in stainless steel tanks.
