The estate and the wine
The estate and the wine "Was it Lord Bryron or Baudelaire who named this Moulis en Medoc wine so divinely well? The Englishman on this way to Spain? Or the Frenchman visting one of the château's neighbours, Odilon Redon, the illustrator of "Spleen et Idéal"? Whoever it was, it can safely be said that true merit should go to the Moulis terroir itself". Château de Chasse-Spleen is a wine whose name has a real ring to it. George Pompidou's favourite wine, its reputation was mainly built by its impressive consistency. Today it is a "Cru Bourgeois Exceptionnel", if only we could redo the "crus classés" classification!
Wine Dominated by the Cabernet, Château Chasse-Spleen 2000 has an intense, deep-coloured appearance. The truffled aromas show the measure of a Bordeaux at its very best. On the palate, we find the classicism of the best Medoc wines: balance, structure and superbly ripe fruit. This wine is seductive for the warmth it delivers, the ultimate bottle to share this winter.
Vinification Hand harvested, vinification in thermo-regulated stainless steel and concrete vats, maceration for around one month during vinification. Then, traditional aging in oak casks (40% of which are renewed each year) for a period ranging from 12 to 14 months.
