The tasting
Color Light orange with copper highlights.
Nose Very pure marked by red fruits (cherries, Morello cherries), stone fruits and with aeration notes of blood oranges appear.
Palate This rosé reveals a great purity and class, revealing a dense and full-bodied palatect that is unique and rare. A ripe, dry, precise, ample, generous and warm rosé to be served chilled!

Temperature Serve between 8 and 10°C.
Food As an aperitif with slices of pata negra, Iberian ham. It is a rosé of meal above all on Mediterranean cuisine, to associate with meats and fish.

The estate and the wine In a historic and preserved enclave on the edge of the sea stands Clos Cibonne. An incredible estate that enjoys a special terroir where the Tibouren grape variety expresses itself admirably. This old endemic variety, which you will not find anywhere else, makes for very original wines that confirm the region’s high potential and the vision and mastery of Brigitte and Claude Deforges, its talented winemakers. 


The rosé in particular stands out by its freshness, depth and subtlety. Here, it is the perfect balance between Provencal heritage and modernity. As for the tibouren red, it offers an intimate and more personal reading of these soils.
Wine Very precise, the 2021 Rosé Tradition Côtes de Provence unfolds a rich and warm palate that immediately won over the Committee. It is a rosé of great purity and class that combines subtlety and density in a unique and rare combination. The nose of red fruits, pit fruits, cherries in particular, is straightforwardly enchanting, with some notes of blood orange. The rich and perfectly ripe palate continues this beautiful register between tension and charm. It is better served chilled but not iced, around 10°, with a nice Iberian ham or at the table with Mediterranean cuisine.
Vinification Hand harvested, from plots of land in Tibouren with an average age of 20 years, harvested in the morning at good maturity, selective sorting, de-stemming of the grapes, direct pressing into stainless steel vats and chilling, fermentation for about 10 days, ageing for at least 12 months in old oak tuns aged over 100 years.
