Wine From a 1.3-hectare plot planted in 1962 and facing due south on a mix of limestone, clay, and sand, the 2014 Avize Champ Caïn Extra-Brut White Champagne is a rare gem, produced in very limited quantities. This Chardonnay shows a ripe, generous profile with exceptional purity on the palate. Its chalky, mouthwatering energy, refined texture, and delicate mousse make it a truly distinctive and elegant expression of Avize.
Vinification Hand harvested on 22 September 2014. Vineyard: 12,000 Chardonnay vines planted on 1.3 hectares in 1962. Vinification in 75-litre casks, stirring on lees, full malolactic fermentation, two rackings before bottling without filtration, aged on lees for 16 years before disgorging in January 2024. No dosage. Production: 11,328 bottles and 406 magnums.
