The estate and the wine
The estate and the wine Located at the heart of an organic farm devoted to vegetable and olive growing, Domaine Terre des Chardons is Jérôme Chardon's project. This 9-hectare biodynamic vineyard is planted on the Costières plateau, on pebbles deposited by the Rhône. Here, everything is simple and straightforward, with manual harvesting in small crates, varietal-by-varietal vinification using natural yeasts and minimal sulfur, and ageing mainly in stainless steel and concrete vats. A charming address to be discovered urgently for its pure, precise wines, vintages of pleasure and freshness that celebrate the South with lightness.
Wine The latest addition to the range, the 2022 red Costières-de-Nîmes Le Chardon Masqué combines Cinsault, Grenache and Syrah in a fine, pleasant juice, edged with silky tannins. It's a light, playful red, pleasant in all seasons, with a lovely fresh, crisp structure, a lively juice well-paced by notes of cherry, licorice and spices. Perfect as an aperitif, slightly chilled, with Parma ham pizza or chicken kebabs.
Vinification Hand-harvested in 10 kg crates. Cinsault and Grenache destemmed and crushed. Grape varieties vinified separately. Aged in concrete vats for 4 months.
