The estate and the wine
The estate and the wine David and Sophie Devynck have breathed new life into 4 hectares of very old vines in some of southern Burgundy’s finest terroirs. Their Clos Sauvage is a hidden gem—an untouched enclave perched at 450 meters altitude, where granite soils dusted with clay and limestone, farmed organically, give rise to wines of intensity, purity, and authenticity.

In 2023, they expanded their vineyards by acquiring an adjoining parcel in Chasselas, Saint-Véran, once owned by the late Denis Jeandeau. These remarkable soils now carry on his legacy, reinterpreted through fresh eyes, yielding wines of exceptional elegance and depth.
Wine From a parcel once meticulously tended by Denis Jeandeau, the 2023 White Saint-Véran Entre Ciel et Terre pays tribute to his legacy with a sleek, graceful wine marked by remarkable tension. This is a vibrant, finely crafted Chardonnay, balancing precision and elegance. Vinified with a focus on purity and finesse, it sees only a quarter of the aging in oak, allowing the terroir to shine. A true favorite of the Selection Committee, rated 93-94/100.
Vinification Hand-harvested grapes, gently pressed after a brief stay in a cold chamber to preserve freshness. The juice is carefully separated, with the final pressings set aside to maintain purity. Aged for 12 months—three-quarters in stainless steel tanks and one-quarter in demi-muids—before bottling on-site in October 2024. Only 2,250 bottles produced.

This cuvée comes from grapes cultivated by the late Denis Jeandeau, a dear friend and respected winemaker. Harvested and vinified with the utmost care, it originates from a 0.70-hectare parcel in Chasselas, where 40-year-old vines thrive in clay-limestone soils at 420 meters altitude, yielding a wine of remarkable clarity and finesse.
