Hand harvested, vinification without chaptalisation or relevurage, no temperature control, 1 to 2 rackings, stirring of the lees, very light filtration known as ‘pre-filtration’, aged in oak barrels for 6 to 8 months, new wood limited to 5%, light sulphiting before bottling.
