Hand harvested, gentle and rapid pressing, separation of free-run and press juices, cold settling for 24 to 48 hours. Alcoholic fermentation in vats between 16 and 20°C with regular stirring of the lees during the first months of ageing, no malolactic fermentation. Aged in vats on fine lees. |
