Hand harvested. Plot: Saint-Pierre-de-Boeuf (lieu-dit Le Grand Val). Direct pressing. Fermentation in barrels at low temperature with indigenous yeasts, stirring once a week for 6 months. Aged 11 months in barrels, of which 25% are new and 80% are 3 to 5 years old, followed by 5 months in stainless-steel vats. Bottling in January 2024. Production of 9,691 bottles. |
