Temperature Serve between 10 and 12°C.
Food 18-24 month Comté cheese, roasted sea bass, lemon butter sauce, herb emulsion, confit cod, parsnip and candied citrus mousseline, stuffed guinea fowl, dried fruit and herbs, asparagus risotto with shavings of aged Comté or Parmigiano Reggiano.
Cellar ageing From now until 2035, and beyond for enthusiasts.
The estate and the wine
Wine The 2020 Savagnin Antide White (Côtes du Jura) is crafted from Savagnin Vert grown on marl and schist soils, and aged for four years on its lees without added sulfur. Brilliantly fresh on the nose, it delivers a vibrant, incisive structure with impressive intensity and layered texture. The flavor profile weaves together savory yellow fruits, almond, and nutty nuances, offering remarkable depth and definition. A superbly composed and deeply expressive wine.
Vinification Hand harvested, vines grown on marl and cardboard schist soils. Aged for 4 years on lees in half-barrels without intervention or addition of SO2, indigenous yeasts.
