Hand harvested. Traditional vinification in temperature-controlled vats. Cold pre-fermentation maceration, temperature control, long vatting with optimal punching down and pumping over. Aged for 15 months in oak barrels, 40% of which are new and 60% of which are made from 1 to 3 wines. |
