The estate and the wine In the heart of Provence Verte, within the Sainte-Baume Regional Park, Château de l’Escarelle boasts 100 hectares of organically cultivated vines, nestled in a completely preserved natural setting, terraced on the slopes of La Loube mountain. The altitude (up to 500 meters), limestone gravel soils, climate, and preservation of local wildlife and flora all contribute to the creation of fresh and aromatic wines in all three colors. This estate masterfully combines traditional know-how with modern techniques, embracing local practices and regional grape varieties without compromise.
Wine With charming fruitiness and finesse, the 2023 IGP Méditerranée PALM Rosé is effortlessly delightful. Its purity and freshness are complemented by good red fruit, wild strawberry, and delicate, light aromas paired with a lovely tension. A perfect choice for an aperitif or the beginning of a meal.
Vinification Mechanical night-harvesting, 100% de-stemmed, short skin maceration before pressing, low-temperature settling, alcoholic fermentation in temperature-controlled stainless-steel vats, malolactic fermentation blocked to preserve the freshness of the aromas.
