The estate and the wine Fanny Sabre is indeed making waves in the Burgundian wine scene. Trained by the renowned Philippe Pacalet and based in Pommard, she brings a fresh and innovative approach to her 4.5 hectares of vineyards. Her collection, encompassing some of the most prestigious terroirs of Beaune, Meursault, Volnay, Savigny, and Pommard, has caught the attention of many, including the discerning palates of wine committees who have highly rated her three cuvées. This speaks volumes about her talent and the quality of her wines in the traditional and storied region of Burgundy.
Wine The 2022 red Pommard is an exquisite Pinot Noir, defined by its infused style and refreshing character, supported by well-integrated aging. Its texture follows this delicate profile, extending it with a certain density and a meaty aspect, all the while upheld by beautiful freshness, noble oak, elegant tannins, and a superb balance focusing on finesse. This Pommard leaves a savory, almost saline finish with notes of tart raspberry. It's a wine to be appreciated over the next 7 to 10 years and has been rated 94/100 by our Committee.
Vinification Hand-harvested, vinified in whole bunches, in open truncated-conical vats, in oak. Decanting and blending of grape juice and press juice.
Aged in 228-liter barrels (40% new), on coarse lees, no racking for 16 months, no filtration.
