The estate and the wine
The estate and the wine One of Spain’s rising stars, Guimaro crafts extremely precise and beloved wines. Hailing from a tiny area in the northwest of the Peninsula, the estate works its local grape varieties by hand, through organic farming, and at a high altitude, on granite, schist, and sand soils.
Wine Pure mencia with very fine fruit, the 2020 Red Ribeira Sacra Mencia is a real treat! It gives off an abundance of fruit reminiscent of black cherry, in a fresh, finely peppered, elegant, juicy and racy frame. Proof if it were needed that Spain is a land of great wines. Rated 92/100 by the Committee.
Vinification Hand harvested. Vines aged 35-40 years on a slate soil with numerous veins of iron, quartz and mica at 300-500 meters altitude. Cold maceration between 5 and 6 days, spontaneous fermentation with indigenous yeasts, pressing, decanting after malolactic fermentation and maturation with the yeasts between 4 and 8 months without stirring. Light fining and filtration before bottling.
