Wine A Selection Committee's favorite! The 2022 white Burgundy Côtes Salines is delivered in a very Chablisian style, with a lot of minerality and finesse. The ripe, floral, refined nose displays a subtle chalky minerality with a touch of almond. The palate is rich, fruity, salivating, and finely chiseled. It is an ideal wine to start the meal, which is both digestible and seductive. It can also be paired with goat cheese, fish, seafood, or a simple quiche Lorraine. A real chameleon. Vinification Mechanical harvest, direct pressing, natural yeasts, fermentation in stainless steel tanks at controlled temperature between 16 and 18°C.
Total alcoholic and malolactic fermentation, maturing on fine lees for 5 to 6 months in stainless steel tanks, fining and filtration before bottling.
