Hand-harvested, blended from a precise selection of 15 crus including Oger, Trépail, Vertus,... and 30% reserve wines aged 5 years on average. Vinification in old barrels for 10 to 15% of the wines. Long, slow maturation of 3 to 4 years in thousand-year-old Gallo-Roman chalk pits.
