In the Cotentin terroir, Maison Hérout produces organically grown, haute couture ciders for aperitif or gourmet use. The 2020 Cotentin AOC Extra-Brut Cider is distinguished by a beautiful golden color, both bright and intense. Its delicate effervescence and its assertive structure are linked to the aromas of apple tatin and ripe fruit. This is a gourmet cider that will not leave you indifferent, with beautiful and refreshing bitters. A dry style, ideal for the table, with fish or white meat worked with spices. After obtaining the apple pomace (pulp obtained after grating the apples), the juice rests for 3 to 5 days and then ferments for 4 to 7 months in vats. The natural bubbling process lasts at least 2 months. Finally, it is kept for a minimum of 12 months in the cellar after bottling. |
