The tasting
Color Bright gold.
Nose Fresh on floral scents, lime leaves, herbal infusions, we are on a 100% vermentino/rolle, it needs to be slightly aerated before tasting.
Palate Very palatable, delicate and with a hint of mineral bitterness, this wine vinified without sulfur is pure and straightforward. It is reminiscent of the Jasper cuvée, which we also adore.
The sommelier's advice
Temperature Decant before serving between 10 and 12°C.
Food Aperitif, a fine tart with anchovies from Collioure, some grilled fish, red mullet, sea bream, a Brebis Corse, a strand of love, a Manchego in shavings or even Parmesan.

The estate and the wine Dominique Hauvette is one of the leading winemakers in Provence. For over 30 years, she has been tending her vines with the same energy, patience, and sensitivity. Whatever the vintage, her wines are expressive, with an innate, vibrant character, thanks to biodynamic viticulture, small yields, a gentle, sulfur-free vinification process, and meticulous aging in a combination of vats, barrels, foudres, and concrete eggs.


Today, this sensitive winemaker has established herself as one of the most respected in Provence, but her talent goes much further. Crowned Winemaker of the Year 2020 by the RVF, 3 stars in the Guide Vert, this emblematic personality leaves no one indifferent.
Wine Aged without wood and with very little sulfur, the 2020 white IGP Alpilles Fugue celebrates the Alpilles region as never before, delivering luscious floral and exotic notes of almond and sweet spices. The wine is fresh and sapid, and can be enjoyed with a fine anchovy tart, grilled fish, or as an aperitif with a Corsican ewe or a fine Parmesan cheese.
Vinification Hand harvested, aged for 9 months on lees in stainless steel tanks, without added sulfur.
