Certified biodynamic since 2003, with low yields, gentle, additive-free vinification without sulphur, and meticulous ageing in a mix of vats, barrels, large oak casks, and concrete eggs, she produces wines of remarkable expression. A winemaker of great depth and sensitivity, Dominique Hauvette is now recognised as one of the most respected names in Provence — though her talent extends well beyond regional acclaim. Named Winemaker of the Year 2020 by the French wine guide RVF, this iconic personality leaves no one indifferent.
Wine A blend of Syrah, Grenache, and one-third Cabernet Sauvignon, the 2012 red IGP Alpilles Cornaline offers a brilliant expression of the Mediterranean, with evocative flavors of pine and wild herbs, a beautifully dense texture, and succulent, vibrant energy. This is a radiant, mineral-driven red with magnificent depth and power, now perfectly harmonious. Awarded 93/100 by the French wine guide RVF.
Vinification Hand harvested, completely destemmed, vinification in wooden truncated cone-shaped vats, light daily punching down of the cap, wine stays on the lees for 2 to 3 weeks.
Aged for 2 years in 30-hectolitre casks (no new wood).
