Vinification Mechanical harvesting, vinification by grape variety in thermo-regulated vats, pre-fermentation maceration at 22°C, regular pumping over during alcoholic fermentation, under temperature control between 26 and 28°C, vatting for about 3 weeks after alcoholic fermentation.
