Vinification Mechanical harvesting. Traditional vinification by grape variety in thermo-regulated vats, pre-fermentation maceration at 22°C, daily pumping over during the alcoholic fermentation under temperature control between 26 and 28°C, vatting for about 3 weeks after the beginning of the alcoholic fermentation.
