The estate and the wine
The estate and the wine Leader of biodynamic viticulture, Michel Chapoutier is one of the greatest winemakers on the planet. As a perfect craftsman of great wines, he selects and illuminates the greatest terroirs with an unwavering talent and continues his eternal quest for excellence at Domaine de Bila-Haut in Roussillon.
Wine Predominantly made from Grenache Gris grapes, the 2015 Chrysopée is a great Mediterranean white wine. Very intense, almost golden, it offers from the first glance the height of its ambitions. For it is a wine with a gastronomic vocation, with rich, ripe and fresh flavors of fruit, which takes on these attributes in the palate, with an unstoppable freshness, vibrancy and salinity. A superb Mediterranean white wine, to be savored or kept for a few more years.
Vinification Hand harvested in the morning in small crates, pressed in whole bunches, lightly settled at 12°C for 24 hours, matured in demi-muids for 6 months with lees stirring for the first 2 months.
