The estate and the wine Michel Chapoutier continues his everlasting quest for excellence in the Roussillon, at the Domaine de Bila-Haut. A pioneer of biodynamic farming, he applies the same principles to these southern terroirs as those that have made him one of the world's most renowned winemakers. With all the talent we know him for, he masterfully blends Mediterranean grape varieties to produce exceptional wines, brimming with delight.
Wine The 2019 red Côtes du Roussillon Villages Latour de France Occultum Lapidem marks another success. Its intense aromas of macerated fruits and its restrained oakiness create a quintessential southern wine, with a masterfully orchestrated Mediterranean profile. This wine has a very ripe essence, framed by fine yet pronounced tannins, where the grenache is infused and the carignan brings all its freshness. This is a delightful bottle to serve with coq au vin or a Provençal stew, or to keep for further aging in the cellar.
Vinification Hand harvested and totally destemmed, maceration for 4 weeks, regular punching of the cap, 50% of the harvest is matured in concrete vats.
