The estate and the wine
The estate and the wine Clos du Mont-Olivet is one of the most coveted estates in the southern Rhône Valley. Firmly established in Châteauneuf-du-Pape and deeply tied to the Sabon family, its fifty hectares of vines are highly fragmented and rest on a unique patchwork of clay, quartz, and pebbles. This mosaic of soils produces wines built to age, marked by remarkable finesse and softness, designed to reveal their full depth over time.
Wine The 2023 Châteauneuf-du-Pape Red stands out with a dominant Grenache profile, revealing delicate aromas of sugared strawberries and peony, in a fine and lightly extracted style. On the palate, finesse and elegance take center stage, supported by subtly refined tannins. The wine impresses with its drinkability and freshness, even in its youth. This immediate pleasure, just months after its February 2025 bottling, still allows us to confidently envision its future in the cellar: it will easily age for 10 to 15 years and promises a beautiful positive evolution. A reliable gem, rated 95/100 by our Selection Committee.
Vinification Hand harvested grapes. 100% vinification in concrete wine. Aged 27% in vats, 70% in large oak barrels, and 3% in half-barrels. Bottled in February 2025.
