Hand-harvested, cold pre-fermentation maceration under bio-protective cover (non-Saccharomyces Torulaspora Delbrueckii and Metschnikowia Pulcherrima yeasts) for 6 days. Maceration for 12 days in concrete vats, with light punching of the cap and sustained daily pumping-over. Aged in stainless steel vats for 8 months. |
