The estate and the wine
The estate and the wine Embark on a discovery journey with Chablis' emerging star, Domaine Passy Le Clou. Crafting compelling wines brimming with vigor and precision, this estate has quickly become a favorite among discerning enthusiasts. Nestled within Chablis' most esteemed terroirs, including the premier cru Beauroy, the vineyard is meticulously divided into 21 individual plots, each vinified separately in a state-of-the-art winery inaugurated in 2018.

Spearheaded by the Descombe family, this promising domain champions the essence of freshness and authenticity in its wines. Now is the perfect moment to explore and savor the unique offerings of this notable newcomer.
Wine Marked by a prominent limestone character and a delicate floral touch, the 2022 white Chablis 1er Cru Beauroy is gracefully and effectively presented. Its very restrained aging process enhances a clean, refined, and classic juice, at perfect maturity, that should still be aged in the cellar due to its youthfulness. It will be a delight to open next spring, decanted, paired with seafood or fine fish. This is a cellar-worthy Chablis from a superb terroir, but patience is required as this is also from an exceptional vintage!
Vinification Hand-harvested, pneumatically pressed, static settling for 24 to 48 hours.
Alcoholic and malolactic fermentation in stainless steel vats, followed by 18 months' ageing on lees, partly in demi-muids.
