The 2019 white Vin de France Toison d’Or is a significant Pinot Gris, characterized by notes of white peach and apricot, with a lot of purity and restraint in its aging process that highlights the fruit well. The structure has tension, freshness, and a great depth of flavor, with a crisp and mouth-watering aspect of great finesse. It can be cellared for a few more years or paired with a cooked fish dish or even poultry. |
