Palate Delicate and powerful at the same time , succumb to the velvety charm of this wine with an infused and harmonious style, of great purity and beautiful minerality, reminiscent of our Burgundian wines.

The success of this estate is in part due to the parcel-by-parcel vinification, organic farming and impeccable maturation process.
Wine Delivering all the genius of its winemaker, the 2017 Red Pajoré Barbaresco is a deep and intense wine, crafted from the highest vines of Barbaresco, a terroir renowned for its freshness and elegance. The nose opens on notes of stone fruits, morello cherry in particular, and rose and tobacco. The body is powerful, with a nice delicacy to it and all the silkiness of a pure nebbiolo. The slightly oaky touch is masterful; Andrea Sottimano signs here a very beautiful 2017 that will easily age for ten to twenty more years! A very pure and mineral wine, close to the style of great Burgundies. Rated 96/100 by our Selection Committee.
Vinification Hand harvested, indigenous yeasts. Fermentation and maceration on skins for 25 days. Malolactic fermentation in barrels. Aged 24 months in French oak barrels (15% new). Wine not fined, not filtered.
