Wine The 2021 Red Barbera d'Alba Superiore Pairolero is a wine of elegance and freshness. Pure and aromatic, with fine notes of graphite, sage and juicy cherry, it is immediately accessible and totally obvious. This is a wine to be enjoyed slightly chilled, in a large glass or aerated in a carafe before serving. It will keep for well over ten years.
Vinification Harvested by hand. Fermentation and maceration for 25 days using only indigenous yeasts. Spontaneous malolactic fermentation in barrels. Aged on lees for 16 months in oak barrels (15% new), all from the François Frères cooperage in Burgundy. No filtration or fining.
