Wine:

The Cuvée des Penitents Blanc 2008 is obviously the result of beautiful work. The Chardonnay expresses itself in a deep, sharp, Chablis style. The milky and creamy-caramel notes come from perfectly controlled aging. It is the wine's precision and acidic support that have given it a beautiful, pure, radiant tautness. This great Chardonnay possesses great freshness and promises pleasurable drinking.

Vinification:

Since 2005, the vineyards have been undergoing conversion to organic and biodynamic growing respecting the terroir and the vine as much as possible.
Sequential pneumatic pressing, static settling of the must at a temperature below 10 ° C for about 48 hours. The fermentation and aging in barrels last from 8 to 10 months. Bottled at the property.

Intense on the nose, white fruit and creamy caramel aromas

Palate:

Fresh and acidulous on the palate, nice easy finish

Serve between 10 and 12°C as an aperitif
Serve between 12 and 14°C with food
