Wine:

St Joseph Descants 2008 is an ethereal wine, which expresses a great deal of softness. Very fine, its lovely fruit rounds off its deliciousness. This beautiful bottle offers all the identity of a wine from the Rhône Valley without any of the excess tannin. Tasty in every way!

Vinification:

Hand harvested, vinification in wood or concrete open vats with two punching of the caps per day. The vatting period, slightly shorter, lasts from 15 to 18 days. Aging in oak casts and vats for 12 to 18 months.

Color:

Intense garnet colour, purplish.

Nose:

Very floral on the nose (violet), blackcurrant, liquorice and spice aromas.

Palate:

Supple on entry, red fruit predominating. The finish is long and marked by the spices.

Temperature:

Serve between 15 and 17°C

Food and wine pairing:

Cold cuts, lamb stew, knuckle of veal, rack of lamb in fine herbs, deer filet in "grand veneur" sauce, sheeps cheese such as Ossau-iraty (a creamy, slight nutty cheese from the Basque Country)

Cellar aging:

Enjoy up to and including 2014

The name Chapoutier has been known in the Rhône Valley since 1808. Seven generations later, we find Michel, in his forties and passionate about "the expression of the soil", at the head of these exceptional vineyards, steeped in history and tradition. Today Chapoutier is one of the most important Houses in the Rhône Valley.
