Wine:

Calcinaires White 2009 defines the approach of the "Maison" perfectly. A blend of modernity and scrupulous respect for the terroir, the entire wine is fat, and laced with minerality. The Macabeu, a traditional grape variety, marries enthusiastically with the Chardonnay and Muscat "guest" varieties. From this unusual blend there emerges an aromatic range that leans towards dried fruit with an almond edge. Lively, honest and terribly appetizing, this is a sculptural wine for lovers of exciting wines.

Vinification:

Hand harvested, direct pressing, settling at low temperature. Natural yeasts. No enzyme addition, no chaptalization and no acidification. Aging in tank on the fine lees for 8 months. Bottled without fining or filtration. Yields: 20 to 25 hl/ha.

Color:

Crystalline yellow appearance with green highlights.

Nose:

Aromas of white-fleshed fruit, lemon zest.

Palate:

Lively, honest and terribly appetizing on the palate, notes of citrus, dried fruit and almond.

Temperature:

Serve between 9 and 11°C.

Food and wine pairing:

Provençal guinea fowl, good fish.

Enjoy up to and including 2016

The only producer in Rousillon described as "exceptional" by the "Guide des Meilleurs Vins de France 2011", Domaine Gauby represents a true culmination of wines from this region. A pioneer and real source of inspiration to a whole new generation of winemakers, the Domaine asserts a style that is the result of minimal intervention in the vineyards as well as in the cellar. Often imitated but never equalled, " le Grand Cru du Roussillon" is a reference wine.
