Grapes mainly from Beaujolais, Côte Chalonnaise, and Épineuil. Traditional vinification. Selection of the best juices during pressing. Alcoholic fermentation in temperature-controlled stainless steel wines. The base wines are then blended and undergo a second fermentation in the bottle and a minimum of 15 months' aging on the lees before being disgorged. |
