Wine:

Regularly praised for its consistency and finesse, the 2023 White Crémant de Bourgogne Extra Brut Chardonnay is no exception in this vintage. It opens with delicate pastry and toasted aromas, alongside notes of white fruit, showing both purity and freshness. The sparkle is fine and well balanced, revealing delicate, lively fruit flavors with lovely aromatic persistence. Perfect as an aperitif with gougères, salmon toasts, or fish. A fine sparkling wine at a very accessible price.

Vinification:

Grapes mainly from Beaujolais, Côte Chalonnaise, and Épineuil. Traditional vinification. Selection of the best juices during pressing. Alcoholic fermentation in temperature-controlled stainless steel wines. The base wines are then blended and undergo a second fermentation in the bottle and a minimum of 15 months' aging on the lees before being disgorged.

Bright golden color, regular and abundant bubbles, very persistent cordon.

Nose:

Serve between 6 and 8°C.

Food and wine pairing:

Pair with cheese gougères, salmon toast, smoked sea bream, or fish.
