The House's flagship, the 2013 Champagne Grand Cru Blanc de Blancs Fleur de Passion is a racy champagne cut out for long aging. The wine possesses the phenomenal drive of the vintage while managing to retain the wine's panache and density of dry extracts. Produced from plots of old vines on hillsides in Cramant, aged 60 years or more, this champagne finds a masterly élan, between finesse and consistency. Serve it in large glasses as an aperitif with an 18-month-old comté or with cooked fish or poultry.Vinification:
Grapes from old 100% Chardonnay hillside vines planted in 7 parcels of the Cramant terroir classified as Grand Cru, with many vines aged 60 years or more, low yields, soil made up of a fine layer of earth on a chalk base, general east-south-east exposure.Hand harvested. Blanc de Blancs 100% harvest 2013. Vinification in oak barrels. No malolactic fermentation or filtration. Bottled in 2014, then aged on the lees for 8 years in the cellars. Disgorged in January 2022.
