Wine:

Crafted from old vines in Ambonnay classified as Grand Crus, with two-thirds pinot noir, the 2014 Champagne Blanc Grand Cru is a wine brimming with energy, offering exquisite harmony and finesse. Fully vinified in barrels, it deserves a few more years of cellar aging; its youthful aromas of fresh and juicy fruits will evolve, supported by a dimension of freshness and precision that is already remarkably distinct. Vinification:

Hand-harvested, vinified entirely in barrels, 96 months in the cellar. Bottled in 2015.

Nose:

Beautiful aromatic palette marked by scents of fresh bread, honey, iodized flavors, yellow fruit (pear and apple) and notes of fresh mint.

Palate:

Fresh and precise, this Champagne reveals finesse, harmony and dynamism, with a long, deep finish.

Temperature:

Serve between 8 and 10°C.

Food and wine pairing:

Creamed poultry, a piece of veal with oyster mushrooms, sea bass with Champagne sauce, langoustine carpaccio and scallops with bronzed fennel.

The balance and finesse of his wines are unmatched and represent an exceptional classicism.

From the very first cuvée in the range, one is captivated by this honest style, which balances strength and restraint while skillfully handling pinot noir. These are robust champagnes, underscored by very old vines, wines vinified in barrels and matured extensively in the cellar to refine and blossom at just the right moment. Purity, nobility, and definition are impressively regular features.
