Wine:

Made from the 2017 harvest base, the Brut Inflorescence Champagne combines Pinot Noir (two-thirds) with Chardonnay in a lively, intense bubble of great length. It is a champagne of beautiful substance, resulting from vines classified in first growths that craft full and voluptuous champagnes, with an assumed richness that is very well contained by a fine acidulous texture. The palate has a nice brioche touch of pastry, linked to notes of red fruits, which are signature of the pinot. The bubbles are very creamy, and we particularly appreciate the present patina of time which suits it so well and gives it a lot of charm. A superb, exclusive wine, ideal for the aperitif.

Vinification:

Hand harvested, harvest base from the 2018 vintage.
Dosage of 6g/l.

Color:

Brilliant gold which signs the presence of chardonnay.

Nose:

Beautiful maturity, chalky accents followed by finely leavened brioche notes then punctuated by milky red fruit aromas.

Palate:

Champagne of beautiful substance, rich, with a creamy bubble and a small patina of time which is very seductive. A beautiful duo where the power of pinot noir and the elegance of chardonnay merge.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitif, salmon tartar with dill, marinated or smoked fish, matured raw milk camembert.
