Wine:

With great purity, the 2014 white Jurançon Les Jardins de Babylone is a paragon of balance. It is a confidential wine, made from only 50 ares, that expresses a unique race and depth around notes of candied citrus, honey, and yellow fruits of incredible brilliance. The delicate bitters, the mineral, and the chiseled palate provide a masterful freshness with a charming spicy touch. A quintessential Petit Manseng wine with infinite persistence and magical aging capacity! To be reserved for a marbled pastry at the beginning of the meal or to be served with spicy food or a citrus salad. Rated 96/100 Bettane+Desseauve.

Vinification:

Hand harvested with careful selection of the berries. Fermentation in wood in demi-muids and cigar-shaped barrels. The natural residual sugar level is 130 g/l.

Color:

Golden, shiny and bright.

Nose:

Delicate notes of pineapple, ripe mango, a touch of quince paste and even, with aeration, of white truffle which will become more pronounced with age.

Palate:

The palate is fed with an impressive energy, the natural acidity supports with the minerality of the wine this ripe juice, of a striking purity.

Temperature:

Serve between 12 and 14°C.

Mango carpaccio, citrus pie, vanilla custard, apricot and slivered almond pie, passion fruit panna cotta.

This is a complete masterpiece, and Louis-Benjamin Dagueneau, who has been at the helm for ten years, tactfully perpetuates the spirit of craftsmanship and excellence initiated by his father.
