Au Pied du Mont Chauve - Chassagne-Montrachet - En Pimont - Blanc - 2020

Wine:

The 2020 white Chassagne-Montrachet En Pimont, a wine rated 93/100 by our Selection Committee, opens with a very mineral, fresh and pure nose, with notes of chalk and mint leaves, with a floral touch and a very elegant woodiness. The palate confirms this ambitious and well-considered register, with a tense and precise structure, where the ageing is interposed with good sense. The mineral register is well asserted, bringing salinity and dynamics, and offering a good persistence. This 2020 will of course find in one or two years an additional fleshiness, a little more amplitude and fatness; it will however seduce from now on after a decanting or a service in big Royal Glass Ultima glasses.

Vinification:

Hand harvested, whole bunch pressing.
Aged 18 months on lees, including 10 months in wood (Burgundy rooms and tuns).

Color:

Bright light gold.

Nose:

Of beautiful minerality, marked by fragrances of mint leaf, notes of chalk and a floral touch.

Palate:

Faithful to the nose, this wine with a precise and dynamic structure offers a palate endowed with an assertive minerality, with good persistence and a fine saline finish.

Temperature:

Decant before serving between 10 and 12°C.

Food and wine pairing:

Fine charcuterie, fish or poultry in sauce, foie gras, cheeses.

Cellar aging:

From now until 2030.
