Wine:

A Selection Committee favorite, the 2023 Côte-Rôtie Sybarine Red earned an outstanding 95/100. It opens with a beautifully fresh and ripe nose, revealing delicate aromas of violet and black tea, underpinned by the subtlest hint of oak from its refined barrel aging. The palate is rich and concentrated, yet impeccably balanced, with fine-grained tannins that promise excellent aging potential—easily over a decade. While already impressive, it’s best to wait at least six months before opening to let it fully settle. A stunning wine, seamlessly blending elegance, ripeness, and freshness.

Vinification:

Hand harvested. Vinification in temperature-controlled stainless steel vats, gentle and lengthy extraction, post-fermentation maceration for 3 weeks. Aged for 16 to 18 months in 228-litre oak barrels, 5% of which are new.
Vines aged between 10 and 90 years old, mainly in the following vineyards within the Côte-Rôtie appellation: Le Goutay, Le Mollard, Le Combard, Lancement, Cognet, Bas-Boucharey, Collet, etc.

Color:

Deep purple colour with good intensity and brilliance.

Nose:

Perfect for its freshness, maturity and brightness, with notes of violet and black tea, accompanied by a delicate woody touch.

Palate:

Dense, full-bodied and well-structured, this very well-balanced wine reveals pure, complex flavours with prominent tannins, guaranteeing comfortable ageing for 10 years or more. Wait at least 6 months before enjoying.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Beef cut, flank steak with shallots, oven-roasted free-range guinea fowl.

Cellar aging:

From today until 2034, and beyond for enthusiasts.
