Wine:

The 2021 Red Chinon Glacière is a model of ripe and alluring Cabernet. The latest addition to the range, this cuvée, vinified without sulfur, presents a spectrum of fruity aromas with hints of fine graphite. The structure is fleshy, nicely juicy, framed by delicate tannins; overall, it achieves perfect balance and delightful palatability. It will be a treat with roasted poultry or pâté en croûte, for instance. Rated 93/100 by the Selection Committee.

Vinification:

Manual harvesting, complete destemming, 15-day maceration, and 6-month aging in concrete tanks. Vinified without sulfur with a slight addition at bottling.

Certified Organic and Biodynamic wine.

Dark red with bright carmine highlights.

Nose:

A nose that expresses the beautiful maturity of Cabernet Franc with a broad array of aromas and notes of fine graphite.

Palate:

Situated in Panzoult, a small village in Indre-et-Loire, Domaine Grosbois is one of the rare estates practicing polyculture. Here, viticulture intertwines with cattle and pig farming, as well as truffle oak cultivation. Everything is meticulously planned to promote biodiversity, making it an extraordinary estate.

Biodynamic principles truly come to life here, with Cabernet Franc finding a unique resonance: the focus is on the purity of the grape and finesse, all without any oaked aging.
