Wine:

The 2017 white IGP Alpilles Dolia , a trio of Marsanne, Roussanne, and Clairette, releases gentle notes of infusion, fennel, and anise, with a slightly smoky touch. This white wine beautifully showcases the trilogy of the northern Alpilles in an expression of fresh fruit that reveals itself gradually, unleashing its brilliance, finesse, and elegance in a deep body. It's a complex, precise, and expressive white wine, ready to be enjoyed now with oven-baked fish. Rated 95/100 by RVF.

Vinification:

Hand-harvested, direct pressing without de-stemming, fermentation in ovoid vats, aged for 12 months in ovoid concrete vats on fine lees. Unfiltered wine.

Dominique Hauvette is a central figure in Provence, tending to her vineyards for over 30 years with the same energy, patience, and sensitivity. Biodynamic farming, low yields, a gentle winemaking process without artificial additives and without sulfur, along with meticulous aging in tanks, barrels, large wooden casks, and concrete eggs, result in wines of superb expression, infused with a vibrant style regardless of the cuvée.
