Wine:

Rich and seductive, with an almost creamy texture, the 2018 Red Ermitage Le Pavillon has an impressive aromatic complexity and strength. The nose opens with mature notes of candied fruits and a touch of black olive, spices, and some woody notes. The palate is full and rich, very concentrated and will be able to wait at least another ten years, if not more, to unfold. Rated 96-98/100 by Parker.

Vinification:

Hand harvested, 100% de-stemmed and vinified in concrete vats, aged from 12 to 18 months in oak barrels, 30% of which are new. Organic and Biodynamic wine, certified by Demeter.

Color:

Red of beautiful intensity finely lined with purple.

Nose:

Bouquet of slightly stewed black fruits underlined by notes of mocha, spices and black olive.

Palate:

Full-bodied and concentrated with delicate fruit, this creamy-textured wine delivers a fabulously dense palate with well-integrated oak.

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Rib of beef with Bordeaux sauce, venison with Grand Veneur sauce, hare à la Royale or jugged hare.
