Wine:

A model of price-pleasure ratio, the 2020 Red Terrasses du Larzac L'Eveil opens with frank aromas of raspberry and licorice; the supple, charming, slightly tannic structure follows this register of evidence and greed. This is a wine to be enjoyed on the fruit, which will remain very open within 3 years. Perfect with grilled white meat or a duck for example.

Vinification:

Hand harvested, alcoholic fermentation, long hot post-fermentation maceration, separate vinification of the different grape varieties, aged for 12 to 24 months in wooden truncated cone vats.

Organic wine, certified.

Color:

Garnet red with purple reflections.

Nose:

Semi-intensive aromas of raspberry and licorice.

Palate:

This wine is supple with charming aromas and fairly straight tannins. A very open wine.

Temperature:

Serve between 16 and 18°C

Food and wine pairing:

Lamb shoulder confit, duck breast with honey, roast pork with spices.

The Mas Conscience is perfectly in line with this eldorado and contributes largely to its success, clinging to the foothills of Larzac, between Montpeyroux and Saint-Jean-de Fos. 

Taken over in 2020 by Audrey Bonnet-Koenig, artisan of the la Peira estate, and Roman Kocholl, the estate crafts, in organic culture, red wines with airy, deep and luminous tannins, which is the mark of this prized address.
